Police said the attack was not terror-related, adding that the 27-year-old attacker was a psychiatric patient.
The man attacked six women and four men aged between 18 and 50, aiming mainly for the head and chest.
A 50-year-old woman died in hospital as a result of her stab wounds, two other people were in critical condition, and four of the victims required surgery.
Police said the attacker, who was not under the influence of alcohol, was detained by people at the Stalowa Wola shopping centre and handed over to officers when they arrived.
Krzysztof Pobuta, a police official, said that the man was unable to explain the attack. “I think he is very depressed... He said he's in a difficult situation and that he has had a tough day,” Pobuta said. (vb/pk)
