Old gingerbread? Well, it needs a month to mature properly for Christmas!
"Stary piernik" - old gingerbread - may just be a perjorative term for an old person (usually a man) but Christmas is not Christmas without piernik. And the cake is best when the dough is left to mature. Agnieszka Bielawska & Elżbieta Krajewska consider the many guises which the cake takes on in the season. As well as being a traditional bake from the city of Toruń, of course.
